Chocolate Zucchini Bread

Ingredients
2 1/2 cups flour1/2 cup cocoa powder1 1/2 tsp baking powder1 tsp baking soda1 tsp cinnamon3/4 tsp salt1 1/2 cups sugar1/3 cup canola oil3 eggs or 3/4 cup egg substitute1/2 cup unsweetened applesauce2 tsp vanilla2 cups packed, grated zucchini1/2 cup mini chocolate chips
Directions
Preheat oven to 350 degrees. Spray 2 loaf plans with nonstick spray.

In large bowl combine flour, cocoa, baking powder, baking soda, cinnamon and salt. Set aside.

In a medium bowl, whisk together sugar, egg, applesauce, oil and vanilla. Stir in zucchini.

Add wet ingredients to dry indgredients. Stir until just moistened. Fold in Chocolate chips. Spread batter evenly in prepared pans.

Bake for 50 minutes, or until toothpick inserted in center of loaf comes out clean.

Cool in pans for 5 minutes. Remove from pans and let cool on wire rack before serving.

    I used whole wheat flour - I thought it was a little strong in taste, but everyone else loved it. It adds some calories, but increases fiber. - 9/24/08

    Truly decadent recipe. Took out the oil and subsituted with flaxseed, applesauce and fat free yogurt. Preferred it in Muffin form as it is a really rich bread. Re-calculated into my own cookbook using Splenda and other substiutions. - 9/18/08

    I was not impressed with the bread, gonna try muffins next time. I seem to be a better muffin baker than bread. I used Splenda and egg substitute, and oil and applesauce in my batch. Sometimes these things taste better the next day. I hope so!! - 8/31/08

    My kids loved this. I doubled it, and it was almost too much for my KitchenAid. I used 3 C. whole wheat flour and 2 C. white and it still turned out great. We will make this again--soon! - 8/31/08

    Pretty good - I subbed wheat pastry flour for 1.5c white flour & added a few Tbs. of flax & oat bran. While it is very moist, I was a bit disappointed in the taste - I thought it should be a bit sweeter. Then again, since I made it in a 9X13 pan, I was probably thinking "cake" when I ate it. - 8/30/08

    I didn't give this a rating, because I was torn. The zuccini bread was delicious, and it was devoured! But the fact that the calorie count was wrong made me upset. Shouldn't there be a check for that? We are here to watch what we eat, & if the recipes aren't accurate, what's the point? - 8/30/08

    I made this twice already. It was moist and deliscious. The first time I used allmost all wholewheat flour and almost no oil. I used applesauce. It was really deliscious. The second time I used mostly soy flour,some white flour and a little whole wheat. I wouldnt use that much soy flour again. - 8/29/08

    Just wanted to let you know the ingredients used for nutrition calculations does NOT include the chocolate chips OR oil. The calories and fat will be higher than what is listed. Make sure to recalculate if you do use these two ingredients!!! - 8/29/08
