Ingredients
1 box spice cake mix1 (15-ounce) can pure pumpkin puree
Directions
Simply mix the pumpkin and the spice cake mix powder together and drop by heaping tablespoons into greased muffin cups.
Bake at 350 18-22 minutes or until a knife comes out clean

    I make these all the time but add 1/2 cup water because the mixture is so thick. I use my mini muffin tins and get about 38 muffins out of the mix. Then I place 5 muffins in pint size baggies and freeze. It's like having my own 100 cal snack packs but without paying the high price for store bought. - 7/23/09

    Tried and tried this several different ways. The best way was this: CARROT cake mix, a can of pumpkin, 1/4 cup of applesauce and 1/4 cup of water. After several trials, that was the easiest and tastiest method. Our favorite muffins are Panera or Atlanta Bread's pumpkin muffins. Try the change! - 1/17/11

    I tried this method with Spice cake and Carrot cake, and they were both really good, but the Carrot cake was incredible! So delicious. I cheated a little and added just a dime size drop of cream cheese frosting to it, and it was great. I recommend this muffin recipe, its wonderful! - 4/7/09

    I love this recipe...been baking these for years. It's actually an old Weight Watcher's recipe and a very good one. You don't have to add water or anything to the recipe mix...the cupcakes will be more moist if you don't. You can also substitute other cake mixes....I sometimes use devil's food. - 10/29/08

    AWESOME. I was actually looking for a pumpkin/flax seed muffin recipe and this recipe was elsewhere but with the flax seed meal added. So I made these muffins with 1 box spice cake mix, 1 egg, 1 can of pumpkin, 1/2 cup of water, 1/2 cup of flax seed meal. They are sooo good and easy. - 1/20/08

    I made a loaf of bread from this. It turned out really well. I added cinnamon and ginger for more flavor. Everyone who tried it said it was just as good as the real thing. Next time I will add walnuts or pecans. Very moist!! - 12/4/07

    I used a carrot cake mix couldn't find a spice one. I added 1/2 cup water and cinnamon, nutmeg and cloves and made it in a bundt pan cooked for about 35-40 minutes and it was very good. I would definitely make it again and it was so EASY. - 4/13/08

    yummy, but i think the calorie count is off a little- at least when i entered mine it was closer to 200 calories- maybe there is a difference in cake mix brands? - 11/9/09

    hi, i'll tell you what , i was looking for something quick w/pumpkin & came across this recipe & they are great. i used the spice cake mix and added applesauce. then i only had one box so i used a quick bread i had also & added nuts & applesauce & a drop of almond extract. they are good too.thanks - 1/19/09

    This is a great starting point. I took a white cake mix and added pumpkin pie seasonings and I added water to make a smooth batter. Gave them to a friend's family who was just home from having a baby and they loved them!!! So thanks for sharing! - 8/11/09

    I added 1-1/2 cups water, and it still came out good. I recommend using gluten free or sugar free cake mixes to make not as unhealthy.
    I also added 1-1/2 teaspoons of cinnamon and 1 teaspoon of nutmeg. - 11/27/09
