Oatmeal Protein Pancake

Ingredients
1 Egg White1 tsp. Vanilla1 tsp. Enova Oil1 tsp. Water1 packet Splenda1/4 c. Vanilla Protein Powder 1/2 c. Oatmeal
Directions
Spray small skillet with non stick cooking spray and pre-heat. Mix first 6 ingredients. Add oatmeal. Spread into pan. Cook about 2 minutes each side. DO NOT OVERCOOK OR IT WILL BE DRY!

Serve alone or with whipped cream cheese or peanut butter.

    I must have overcooked it. This wasn't like cooking a normal pancake and came out very dry (but the flavor was good.) I skipped the extract because the protein powder is already so strongly flavored. Also, the sugar in the protein powder is plenty -- no need to add sweetener. - 4/6/10
