Whole wheat/flax pancakes

Ingredients
1/3 c whole wheat flour1/3 c ground flax seed1/3 c white flour1 large egg3/4 c soy milk2 tbsp canola oil1 tbsp brown sugar3 tsp baking powder1/4 tsp salt
Directions
Beat the egg with the milk. Add the sugar and canola oil and mix.

Mix all the dry ingredients together. Add to wet ingredients and mix until well combined.

Cook at medium heat on a skillet. Flip after a few minutes, or when the bubbles do not reclose around the edges.

Makes about 8 4-5" pancakes.

    These were gorgeous!! We added wild woodland blueberries to ours and could not believe how sweet and tasty they were with so little sugar. We'll experiment with applesauce in place of the oil next time to see if we can lower the fat as well. Excellent recipe, thanks! - 6/30/09

    I made these this morning and OMG they were amazing!!! I used 2 cups of fine organic whole wheat flour and splenda brown sugar and omitted the canola oil completely.
