Steak and Potato Bomb

8 oz. Lean Beef (Tip Round is good)1/2 cup Onion, chopped2 tbsp Honey Teriyaki Marinade/Sauce1 med. Potato
Start by washing the potato and poking holes in it. Wrap it in a paper towel and stick it in the microwave for 5min. Leave potato alone until you are done cooking the meat. This gives the potato time to finish cooking from the steam trapped inside the skin.
Cut beef into cubes of approximately 1cm.
Cook beef in pan over high heat with a bit (just enough so it boils away in about 2min or so) of water so you dont burn the beef.
When the water boils away add chopped onion and sauce (your favorite sauce will do, but I find the sweet teriyaki contrasts well with the potato)
Cook until onions are soft.
Take potato out of microwave (CAUTION: THIS CAN BE EXTREMELY HOT AND THE STEAM WILL BURN YOU) and cut into fourths.
Pour beef/onion/sauce mixture over your potato.
Wasn't that fast!

*I use Ken's Honey Teriyaki Marinade, but feel free to substitute whatever flavor you are feeling.
