Roasted Pork Chops with Sweet Potatoes & Apples

Ingredients
2 3 oz boneless pork chops2 small sweet potatoes1 medium size apple1 small onion1 T. cinnamon1 T. ground nutmeg1T ground ginger3 tsp sugar1 tsp cayenne or red pepper
Directions
season pork chops with red pepper and brown on both sides.
Slice Sweet potatoes, apple, and onion and season with sugar, cinnamon, ginger and nutmeg.
bake pork chops and sweet potato / apple mixture uncovered in a cast iron skillet or casserole dish at 420 degrees for about 25 minutes.

    We looove sweet and spicy! I sliced my potatoes really thin so they'd cook in time. After I browned the pork, I threw the potatoes, apples, and onion into the skillet and sauteed for a few minutes. I also added some applesauce for extra moisture. YUM! We'll make it again for sure! - 5/13/09

    I enjoyed this, but there was too much spice on the vegetables for my liking (and that is saying something!) Next time I will slice the sweet potatoes thinner and the apples thicker so they are all the same consistency when done. - 12/7/09

    Yes, you may need to adjust the seasonings. I've never measured them. I just sprinkle until it looks good to me, so the measurements are estimated.

    Very good flavor. I am going to try others suggestions to add applesauce to make it more moist. I used some brown sugar too, which I really liked. The apple/potato/onion mixture should be tossed around a little during cooking so the top doesn't dry out too much. - 12/2/10

    The veggies take longer than 25 minutes. I had to remove the pork and continue cooking the veggies for at least another 45 minutes. I think the potatoes need to be precooked and sprinkling the spices to taste is highly recommended as I followed the recipe and almost choked on the amount of spice. - 3/15/10

    This was a good recipe. I did substitute the apples for a cup of applesauce. I put it in the crockpot for about 5 hours. I didn't enjoy the flavors as much as I thought I was going to. I think I might leave out the red pepper if I made it again. - 10/2/09

    Terrible! It tastes like someone started a sweet potato recipe then threw in a pork chop and decided to bake it before finishing. I love all the ingredients but not like this. Even with the recommendations this recipe is not salvageable. Not sure what flavor contrast going for here but missed. - 1/8/17

    Used a little less than the Tbl's indicated for the spices, and tossed the apple, potato, and onion with 1Tbl of olive oil before going into the oven. Very good! Horseradish with the pork chops adds a nice contrast!! - 1/19/12

    This is a workable recipe. The sweet potatoes had to cook another half hour, which left the pork chops dry. Next time I will pre-cook the sweet potatoes and onions, or perhaps cut the sweet potatoes in bite-size chunks instead of slices so they will be done sooner. A tasty one-dish meal. - 12/19/11
