Cauliflower Fritters

Ingredients
2 cups cooked cauliflower florets1 egg, beaten1/4 cup green onions, minced2 Tbsp Parmesan cheese, grated1/2 tsp onion powder1/2 tsp garlic powder1/2 Tbsp chopped fresh cilantro
Directions
In a large mixing bowl mash cooked cauliflower. Add egg, onion, Parmesan and spices. Mix well and form 8 fritter patties. Coat nonstick skillet with cooking spray and cook until golden brown on each side.

Makes 8 1/4-cup patties.

    Thanks so much for this! I added 1/2 cup of finely crumbled feta, and 1/2 tsp of cumin (turmeric). Put the mashed mixture evenly into a frying pan. Cooked it on med heat 10 mins, then put the frying pan in the oven on broil for 10 mins (until the top is crispy). An AWESOME frittata!!!!! - 12/8/09

    I used a whole head of cauliflower, and added 3/4cup of flour which made them stick together in perfect patties! Absolutely delicious!!!! I also added some turmeric :) - 9/19/10

    Really tasty, but you need to squeeze out some moisture when you're forming the patties, otherwise they fall apart. Once I made them a little thicker and squeezed out the excess moisture, they held together perfectly. - 12/19/14

    I made these tonight as my first attempt at ever trying cauliflower. I added yellow pepper, red onion and 1/2 cup whole wheat bread crumbs. they stuck together just enough and I got 9 patties. My recipe on MyFitnessPal showed only 37 cals each! Next time I need to cut back on the cilantro tho. Yum! - 3/28/14

    Well as a NON-FAN of cauliflower I will say these were tasty. I would do again for sure but not as 'fritters'. I found them hard to form into patties and they fell apart. What I'm thinking is maybe just bake as a casserole. I'll re-post when I do. All in all these got me to eat more veggies! - 10/7/09

    very good recipe, but, your nutrition values are wrong. The cholesterol value for 8 servings should be about 24 mg not 114.5. One egg has 187 mg divided by 8 =23 add 2 tbsp of parmesan cheese -8 mg divided by 8 = 1 mg for a total of 24 mg of cholesterol. Nothing else in the recipe contains any. - 5/13/16

    I used this as the basis for a 'whatever's in the fridge' version. Cooked cauliflower and corn, then mashed well and added chopped green pepper, garlic, onion, basil, chilli flakes, egg and mature cheddar. Amazeballs!! - 12/16/14

    If the serving is ONE fritter out of the 8 you get making the recipe here....how do you get 45 calories for the egg in ONE fritter? If you only use 1 egg in the whole recipe for 8 fritters....and one large egg is 80 calories....then to me 80 divided by 8 is TEN ( 10 ) NOT 45! What gives? - 12/16/18

    The recipe shows 1 egg, but the nutrition is based on a cup of eggs. That greatly inflates the cholesterol in the recipe as well as the calories and protein. - 1/29/21

    This review has nothing to do with how the food was. Latkes are made of potatoes. I can't imagine any Jew including myself who decides to make these for Hannukah. Just call them pancakes. Leave the Yiddish to the gefilte fish. JMO - 12/16/20
