Friut and Nut Oatmeal Bars

Ingredients
1.5 cup old fashioned oats2 Tbsp unsalted butter, softened1 cup canned pumpkin (not pumpkin pie!).25 cup brown sugar, packed (light or dark).75 cup Splenda1 egg white1 egg.25 cup light coconut milk2 tsp bourbon vanilla.5 tsp freshly ground nutmeg.5 tsp salt.5 tsp baking soda.5 cup chopped pecans.25 cup sliced almonds.25 cup chopped walnuts.5 cup dried apples, chopped.25 cup dried cranberries.25 cup raisins
Directions
Preheat oven to 350... toast oats for 12-15 min, stirring occasionally. Cream butter, sugars and pumpkin. Add eggs, egg white, coconut milk, vanilla and mix until smooth. Whisk dry ingredients except oats, nuts and fruit. Mix dry ingredients into wet ingredients. Stir in oats, nuts and fruit. Put in greased 9 x 9 pan and bake for 30 min and toothpick comes out clean. Cool for 20 + min and cut into 16 squares. Make sure you use a serrated knife and wait until they are cool, otherwise they will be hard to cut! Makes 16 servings.
