Healthy Fruity Breakfast Bread

Ingredients

1/2 cup dried apricots, soaked1/2 cup dates, pitted1/2 cup raisins1/2 cup walnuts1 egg2 tbsp oil1/2 cup plain low-fat yogurt1 cup whole wheat flour1/2 tsp baking soda
Chop apricots and dates into raisin-size pieces. Toss together dried fruits and walnuts, and sprinkle with a tbsp a flour, tossing to coat lightly with flour.
In a separate bowl, beat egg until fluffy. Beat in yogurt and oil, set aside.
Sift flour and baking soda together, then mix into egg mixture gently. Fold in dried fruit pieces.
Pour mixture into a lightly greased, 7"x4" loaf pan (or muffin tins, etc). Place in a cold oven; turn the heat to 350F. DO NOT OPEN THE OVEN DOOR for at least 30 minutes. Check the bread using the toothpick method. If it needs more baking do it about 5 mins at a time.
Let cool in pan for 5 minutes, then remove to cooling rack and let cool a bit more before slicing.
