Easy Black Beans and Rice

Directions
1 tbsp extra virgin olive oil1 cup brown rice, cooked according to package instructions.1 can ranch style black beans1 can Rotel (diced tomatoes with green chiles)
Cook rice, using the 1 tbsp olive oil in place of other fat in package directions.
In another large sauce pan, combine black beans with Rotel. Season to taste with chili powder, cumin, etc. Add cooked rice and stir to combine. If desired, garnish with fat free sour cream or a small amount of shredded cheddar cheese.

TOOK THE RECIPE AND ADAPTED IT TO WHAT I HAD -- BLACK, BEANS, CORN, GREEN/YELLOW PEPPERS, CILANTRO, GARLIC, SAUTEED IT IN A LITTLE EVOO AND IT WAS YUMMY!!! THANKS FOR THE BASIC RECIPE TO GIVE ME THE IDEA. ALSO I RINSE THE CANNED BEANS AND CORN TO GET RID OF SOME OF THE SALT. ADDED LEFTOVER CHIX. - 4/11/09
