Easy Black Beans and Rice

Ingredients
1 tbsp extra virgin olive oil1 cup brown rice, cooked according to package instructions.1 can ranch style black beans1 can Rotel (diced tomatoes with green chiles)
Directions
Cook rice, using the 1 tbsp olive oil in place of other fat in package directions.

In another large sauce pan, combine black beans with Rotel. Season to taste with chili powder, cumin, etc. Add cooked rice and stir to combine. If desired, garnish with fat free sour cream or a small amount of shredded cheddar cheese.

    I had leftover rice, so I was able to make this VERY quickly! I didn't have any Rotel, so I used salsa. And I also added cheese. It was very good, and now I have three more lunch servings for a fast meal on busy days. - 2/22/15

    TOOK THE RECIPE AND ADAPTED IT TO WHAT I HAD -- BLACK, BEANS, CORN, GREEN/YELLOW PEPPERS, CILANTRO, GARLIC, SAUTEED IT IN A LITTLE EVOO AND IT WAS YUMMY!!!
