Slice 6 large shallots or onions into large pot.Add 2 cans tomatoes with their juice.Slice up 1 large head of cabbageCut 6 carrots into ringscut up the bell peppers and bunch of celery and add these to the pot.1 pkt of vege soup can be added or 1 can.2 cans of green beans or fresh beans cut.Season with salt, pepper & if desired curry.Chop up parsley and add this to pot.Tomato paste to thicken is optional.
Put pot on stove at a slow heat and allow to simmer for as many hours as you like. The longer it cooks the better it gets.
Tastes good hot or cold.
Keep in fridge & take out the quantity for your meal.
Makes about 6 litres.
