Slow Cooker Pork Chops with Fruity Stuffing

Ingredients
1 package (6 ounces) herb stuffing mix2 celery stalks, chopped (1 cup)1 medium apple, chopped (1 cup)1 large onion, chopped (1 cup)1/2 cup dried cherries1 cup fat-free chicken broth 3 boneless pork chops, about 1/2 inch thick, cut in half
Directions
1. Spray inside of 4- to 5-quart slow cooker with cooking spray.
2. Mix all ingredients except pork. Place half of the stuffing mixture in slow cooker; top with pork. Spoon remaining stuffing mixture over pork.
3. Cover and cook on low heat setting 6 to 8 hours or until pork is tender. Add more water if necessary.

Serving size: 1/2 cup stuffing, plus 1/2 pork chop (about 3 ounces cooked)

    One of THE best crock pot recipes I've tried yet! Sweet meets savory and for not too many calories. Thanks so much! As a side note, I used a ~2lb roast instead of chops. Also, I left the skins on the apples - it was faster. - 10/21/08

    Thank you; I'm glad you liked it. I'll have to try it with the roast. I'm making it again next week except I'm thinking about doing cranberries and peaches instead of the apples and cherries.

    LOVED IT! Used pork loin, left out the cranberries, added mushrooms and sweet potato, reduced broth to 3/4 cup. Lots of ways to use this as a base recipe - will try with turkey breast or chicken next time. - 1/20/13

    The recipe is good but the portions and nutrition information are off. Only 3 oz of pork for the whole recipe is not accurate. It should be 3 oz per pork chop added. For a total of 18 oz of pork. The recipe is good but don't rely on putting it in your food tracker. - 12/19/11

    Very tasty and super easy to make, but the calories are way off. I got around 370 per serving by my calculation. I used the dried cranberries as the title suggests. Also may try with a roast next time as my pork chops fell apart due to the slow cooking. - 2/24/09

    dont know what happened.. smelled great cooking but the dressing came out way to moist, one reviewer described is as a soupy mess, (my thoughts as well) I ate a couple chops and threw the rest out, family wanted nothing to do with it.. - 2/15/12

    I'm confused - the recipe name says cranberry but the recipe calls for dried cherries? I wondered if that was a typo and should be dried cranberries? I know they taste pretty similar so I'm guessing they are interchangeable? I made this and it was ok; we're more of a plain stuffing type family. - 1/4/09
