Cool Cucumber Salad

Ingredients
1 tablespoon olive oil2 tablespoons cider vinegar1 teaspoon sugar1/2 teaspoon salt-free herb blendPepper, to taste 1 large cucumber, peeled and thinly sliced1/2 red onion, thinly sliced
Directions
Combine the first five ingredients in a medium bowl, then add the vegetables. Toss well, cover, and refrigerate until ready to serve.

    I like to make this with the addition of diced tomatoes, and I use red wine vinegar instead of cider vinegar. Also, any left over liquid can be made into a great salad dressing (waste not, want not). - 5/23/08

    This was good. I didn't add the sugar but even my children commented on how sweet it was. It was sweet enough with just the apple cider vinegar. I also didn't have a red onion so just used a white one and that was fine. I added 1 avocado to it as well.

    Tasty, seemed like there was too much oil for the amount of cucumber so I will use less next time. Also wondering if the calorie count is less because there was so much oil in bottom of the bowl when finished. Wishful thinking! ;) Good for summer! - 6/4/08

    This is so tasty! I would probably cut down a bit on the oil - maybe half the amount or perhaps only 2 tbsp - but then I LOVE vinegary things and don't need the oil to balance it out as much. I love this dish, though. - 5/23/08

    If you leave out the olive oil and chill the salad, it gets very crucnchy. Nice! I also use just a little sugar (~1 tsp) sprinkled over the top. - 5/23/08
