Herb-Crusted Salmon Fillets

4 small Atlantic Salmon Portions (@ 4oz (120g) each1 cup Whole-grain Breadcrumbs2 Tblspn Chives, roughly chopped2 Tblspn Parsley, roughly chopped1/2 Tsp Garlic Powder1/2 Tsp Onion Powder1 Tsp Lemon Peel, grated1/4 cup Lemon Juice
Pre-heat oven to @400 deg F (@200 deg C)
Season salmon fillets lightly on both sides with salt and pepper . Place skin side down on an oven tray lined with baking paper.
Process all ingredients, except the lemon juice, in a food processer until combined and chopped.
Sprinkle the salmon portions with lemon juice and put the breadcrumb mixture on top of the salmon fillets, pressing down on top.
Spray lightly with canola spray, and cook for @10 to 15 minutes until just cooked.
NOTE: You can vary the herb blend, or sprinkle with low sodium soy and add ginger etc for an Asian taste.

Really really good! The flavor was great and it was very easy! I added lemon juice after baking, and agree with the other comments that you don't have to add as much bread crumbs if you don't want to. YUMMY! - 12/8/08

Thanks for your comment and I'm glad you enjoyed the recipe. Sometimes the salmon fillets come in different sizes, the amount of crumbs will depend on the fillet size.

what other spices would you use? I've never fixed salmon but I want to try it and this looks like the best recipe. - 11/14/08

You could try dillweed, basil and I'm told (although I haven't tried it) that rosemary is nice with fish. You could also sprinkle it with another juice or balsamic vinegar for a different taste.

Anyone know how Panko crumbs might work? Don't they get crunchier? This does sound good and a different spin on plain fish. - 7/23/08

I haven't tried it with panko, but they're breadcrumbs, so I would think that it would work.

This sounds easy....must try the lemon juice and parchment paper.
I usually use an all purpose seasoning and olive oil and let it soak overnight and bake for 15 mins. I must give this a try probably with italian seasoned breadcrumbs mixed wth parmasean cheese. Either way, it sounds yummy!!!! - 1/8/10

I haven't as we don't get Tilapia here in Australia, but I would imagine it would work for any semi to firm fish. You can also add different herbs etc that you like to change the flavour and make it more to your liking.

It would be worth a try!! I reckon recipes should not be carved in stone, so I'd give it a go, I think you'd have to make sure the chicken was a uniform size, but other than that why not!!
