Pistachio Crusted Salmon

2 Salmon fillets (4 oz each)2 oz Pistachio nuts3 tsp grey poupon
Chop nuts in mini food processor until small but not ground. Rub mustard over fish fillets and then roll in pistachio nuts. Spray pan with non stick spray and cook fillets for 3-4 minutes each side until done. Pistachios will darken and have a great flavor.
*Note this can be sauted in olive oil as well just be sure to add the extra calories and fat.

W/ the ingredients together, I wasn't really sure how it would turn out. I used my hand-crank nut chopper, and I don't think I got the pistachios fine enough. Plenty stuck, & we did like the way the nuts tasted darkened. Those that fell off went well with the couscous, spinach, and raisin side. - 1/10/09
