Chicken with Orange Vinaigrette

Ingredients
1 10.5 oz can mandarin oranges in juice, drained4 T crushed pineapple in juice1/4 cup orange juice2 T lime juice1 clove garlic, minced2 T balsamic vinegar1 pound boneless, skinless chicken breastssalt (to taste)pepper (to taste)paprika (to taste)
Directions
For vinaigrette, combine juices, vinegar, garlic in a small bowl. Add oranges and pineapple. Refrigerate while you do the rest of the meal.

Cut chicken breasts into pieces that will cook quickly. Sprinkle with paprika, salt, and pepper to taste. Spray a skillet with olive oil cooking spray, cook chicken for about 5 minutes on each side, until browned. Lower heat and add liquid part of vinaigrette. Cover and simmer for 10 minutes or until chicken is cooked. Add remainder of vinaigrette and cover until just heated through.

    This is a good recipe although the flavor is a little simple for my taste. I would also change the directions slightly to allow a thickening of the sauce... it's very runny. Very good though, and quick, so I'll surely make it again. - 10/28/08
