Salmon fillet primavera

1 tsp olive oil1/2 onion, diced very small3/4 cup zucchini, julienne3/4 cup carrot, julienne4 mushrooms, diced very small2 tbsp herb and garlic cream cheese spread1/4 cup milk1 pound salmon (I use the High Liner 4 filet pack, it's great!)
Saute the vegetables for a few minutes in the oil.
When the vegetables are just cooked, add the cream cheese until melted, then add milk until desired consistency
Pour onto the salmon, cover and place in a 350 F oven for about 20-30 minutes (depending on if the salmon has been thawed or not)
Makes 4 servings of 1/4 pound

I am in the process of cooking this at the moment, and OH MY GOD... it looks freaking amazing, it tastes amazing (I taste tested) and it smells amazing. I used fat free skim milk, and grabbed a container of garden veggie lite cream cheese from dunkin' donuts, but this is one of THE best recipes ever - 6/13/08

My husband went to the kitchen in his "browsing around" mode, and I told him that I was sorry there wasn't any left. He replied, "I'm not really hungry, it was just so good that if there was more I was going to get some!" This is definitely a keeper. The veggie mixture adds just the right taste! - 4/28/08
