Pork Chop Suey

1 T olive oil1 medium onion, thinly sliced3 stalks celery, thinly sliced1 can bean sprouts, rinsed and drained1 can condensed mushroom soup1 c leftover gravy (I used turkey) or 1 small can chicken gravy1/4 c soy sauce8 oz leftover roast pork, trimmed of fat and cut in slivers
Heat olive oil in large skillet and add celery and onion. Stir and cook until onion is golden brown, about 6 or 7 minutes. Add soy sauce, mushroom soup and gravy. Stir in pork and bean sprouts. In a separate cup, mix cornstarch with 1/4 c cold water until thoroughly blended. Add to skillet. Bring to boil then reduce heat and simmer until thickened. Serve over brown rice.
Note: I served over spaghetti squash. Low fat soup and low sodium soy sauce would make this dish healthier, but I didn't have them on hand.
