Carolynn's Eggs Florentine

2 large eggs1/2 cup steamed fresh spinach1 tbs Percorina Romano Cheese, grated
Heat oven to 450 F. In small baking dish layer steamed spinach , 1/2 the cheese and then carefully crack the two eggs into the dish. Cover with remaining cheese. Bake until the eggs look done to your specifications, about 10 to 12 minutes.
You may of course add more cheese. Also, a teaspoon of whipping cream can be poured around the edges of the eggs. As I am trying to keep the calorie level down, I did not include them in the calorie count.
