South of the Border Chicken

Ingredients
4 boneless skinless chicken breasts16 oz. can black beans drained1 cup frozen corn2 cups salsa1 jalepeno pepper seeded and chopped1 tsp. coarse kosher salt1 handful cilantro finely chopped ( about 3 Tbsp)8 oz. reduced fat sour cream
Directions
Rinse chicken breast, pat dry with paper towels and place in bottom of 2 qt casserole. Layer black beans and corn over chicken. combine salsa, jalepeno, salt, and cilantro and pour over chicken, beans and corn. Bake in a 350 degree oven for 1 hour and 30 minutes or till chicken is done. Remove Chicken and place on platter stir sour cream into black bean, corn, and salsa in casserole. Spoon mixture over chicken and serve over brown rice if desired.
