Zuppa Tuscana Soup

Ingredients
1 lb. Italian Sausage (ground), (I use ground pork and add Sausage seasoning)3-4 cloves garlic, minced2 med. onions, chopped2 large potatoes, peeled and diced1 Tbsp Extra Virgin Olive Oil3 cups water2-3 tsp Italian Herb Seasoning4 chicken bouillon cubes1 can diced tomatoes with basil, garlic and oregano1 can white beans (ie. great northern/white kidney)3-4 cups chopped fresh spinach1 cup light cream
Directions
Brown pork sausage, garlic and onion in skillet. Add olive oil and diced potatoes. Saute until potatoes are almost done. Add water, italian herbs, bouillon cubes, tomatoes, beans and spinach. Simmer until potatoes are done. Add cream and simmer 10 minutes. Makes 6-1 cup servings.

    Soup is high in calorie and fat but balanced off with lots of fiber. Absolutely delicious, but to cut cooking time, I will par boil the potatoes for about 5 minutes next time I make it. AND there definitely will be a next time. - 11/12/08
