Norwegian pollock "beef" with onions

Ingredients
800 g fillets of saithe/coalfish or atlantic pollocksalt and white pepper2 large onions (white/red) sliced and fried to "jam"1 tsp sugar/salt mix for onions Grated carrots with a squeeze of lemon500 g potatoes (boiled)Optional: low fat sour cream
Directions
Cut the fish into 4 portions and sprinkle with salt & white pepper. Set aside until the onions and potatoes are almost done.
Boil potatoes until tender.
Slice onions, place in a bowl mix in sugar/salt and let rest for a few minutes. In a non-stick pan fry the onions in 1/2 the cooking oil on low heat until they are soft, sweet almost like jam.
Fry the fish in another non-stick pan on moderate heat until done (both sides)
Grate carrots. Squeeze lemon juice over carrots to prevent mis-coloring.
Optional (not included): low fat sour cream

    how much oil? I don't see it listed. do you just serve the boiled potatoes on the side with the carrots? mash? - 5/11/11

    I use a tiny amount of oil, just enough to coat so the fish doesn't stick to the pan. I normally serve plain boiled potatoes on the side, along with raw grated carrots. Mash might also work. I sometimes add a dollop of low fat sour cream to the potatoes to taste... I do hope you enjoy it.
