Easy Muffin Mix and Muffins

Ingredients
For the dry mix:8 cups flour (calculated with white flour, but wheat is great too)3 cups sugar3 tsp. salt3 tsp. cinnamon2 tsp. nutmeg3 Tbsp. baking powderThis is enough to make four batches.Ingredients for the muffins:1 c milk (I used 1%)1 egg1/2 c applesauce, unsweetened (can use oil, if you want that instead)2 3/4 c of the dry muffin mix
Directions
In a huge bowl, mix together all the dry muffin mix ingredients. I use a whisk to mix it all together until well blended. Store in a container with a lid until used.

To make the muffins, combine 2 3/4 c of the muffin mix with the wet ingredients. Spray muffin tin. Full tins half to 2/3 full. Bake in a preheated 400 degree oven. 16 minutes for regular sized muffins. 12 minutes for mini muffins.

The muffin mix recipe makes enough for about 4 batches of muffins.

The muffin recipe makes 12 (muffins cups mostly full) to 14 (about 2/3 full) muffins.

Calories were calculated on 14 muffins per batch x 4 batches=56 muffins (sorry, I originally typed in the wrong number)

add 1/2 cup pumpkin, cut the applesauce (oil) to 1/4 cup, 1/4 cup chocolate chips

add 3/4 cup applesauce for more apple taste instead of 1/2 cup

1/3 cup craisins and 1/3 cup white chocolate chips

1 mashed banana, 1/3-1/2 cup nuts or chocolate chips

1/3 c grated carrot and 1/3 cup raisins

any kind of nuts--1/3 to 1/2 cup
chopped up fruit--1/3 to 1/2 cup (grated apple is good), blueberries-toss in a little flour first and they won't float to the top, any pie fillings



For liquid add-ins increase cooking time by a few minutes.

    The salt is too much. I think you should decrease the salt to half. I didn't have any muffin containers so I made 5 large muffins in small bowls (for my five working days). They taste good. I'll pack them for my breakfast at work and have them with some tea. Thanks. - 12/26/09

    It's easier to weigh the flour than measure it. 1 cup of unbleached all-purpose flour is 5 ounces or 140 grams. 1 cup of whole wheat flour is 4.5 ounces or 130 grams. 1 cup of sugar is 7.5 ounces or 204 grams. This recipe is amazing. I bake on the weekends and freeze individually in saran wrap. :) - 2/20/11

    Such a great idea - mix makes up into 4 batches, only takes a few minutes to have the base mix for whatever you decide to make them into. I've added some walnuts and more apple to my first batch and they were so moist and flavorful. Will make the rest into orange-cranberry, carrot-pecan and banana. - 5/17/10

    This was awesome! I will definitely keep this on hand. I have tried plain with cinnamon sugar on top, pumpkin/choc. chunk, banana nut, and blueberry.     This is the best recipe EVER for muffins. They are light & fluffy, just like bought, only tastier.     Just made a batch of these. I had to change the recipe a bit. I didn't have applesauce and the only oil I had on hand was extra virgin olive oil. I add some pineapple tidbits and chopped macadamia nuts. GREAT tasting! Extra mix went into vacuum bags w/recipe written on each bag. Each bag = 1 batch. - 7/9/11

    I made the mix and 2 batches of the muffins today. They are very good! I used whole wheat flower and splenda instead of white and sugar. One batch I made blueberry, they are yummy and juicy! The second I made carrot/raisin/sunflower which are good! Two batches to play with! - 2/21/11

    awesome, spent most of 1 day baking and freezing, apple cinamon, banana nut, pumpkin chocolate chip, and blueberry. Only 1 major issue, the freezer has been opened and closed so much to get to the frozen muffins that everything else is thawing. j/k totally awesome - 8/30/09
