Vegetarian Groundnut Stew

Ingredients
1 tbsp oil 2 cups chopped onion 2-3 cloves garlic3 cups winter squash, peeled and chopped2 cups kale (or cabbage- Kale is in the calculations). 1 dried chili pepper or ground red pepper to taste.3 cups pureed canned tomatoes or tomato juice. 1 cup apple juice 1-2 tsp ginger root peeled and minced 1/2 cup green beans1/2 cup peanut butter.
Directions
Saute onion and garlic in a pan in the oil until the onions are transluscent.

Add the squash, kale, and chili pepper and saute until flavors are mixed.

Add tomatoes, apple juice and ginger and simmer until squash is tender, about 20 min.

Add 1/2 cup green beans and simmer for another 5 min more.

Add peanut butter, stir and simmer until ready to serve. Serve on top of brown rice or millet, with toppings: chopped green onions, parsley, cilantro, peaches or other fruit, crushed peanuts.
