Parsley, 2 bunchesOnion tops, 3-4Cucumber (peeled & seeded), 1 medium*Lemon Juice, 3-5 Tbsp*Extra Virgin Olive Oil, 3 tbsp Roma Tomatoes, 2 Bulgur, dry, 1/4 cup Warm Water
Cover the bulghur wheat with warm water in a big bowl. Set aside to absorb water.
Finely chop the green veggies in a food processor. Add the olive oil& lemon juice.
Mix in the tomatoes. Adjust the lemon juice.
Mix in the tomatoes. Adjust the lemon juice and olive oil to taste.
Chill for at least a couple of hours.

Used chives instead onion tops. Will probably add chopped mint leaves next time. My son and I love a slice of 12 grain bread toasted, spread with some roasted red pepper hummus, topped with a scoop of taboule, a sprinkle of feta cheese and some alfalfa sprouts. This recipe works great for that. - 6/4/09
