There was no such thing as chickpea flour in the ingredients for the calculation of the calories so I selected a whole wheat flour, because these cookies can be made even for those of us that have no gluten intolerance.1 cup chickpea flour1 egg white1 tbsp unsweetened applesauce1 tbsp brown sugar1 small apple, peeled and shreddeda handful of raisins1 tsp ground cinnamonchopped walnuts (optional)
Preheat the oven to 375° F. Cover a cookie sheets with a baking paper, set aside.
Pour into the blender the egg white with the applesauce, the cinnamon and the brown sugar. Blend on high speed about a minute or until it reaches a white and creamy consistency. Add the chickpea flour and stir to combine well with a wooden spoon.
Squeeze the juice from the shredded apple with your hands and add it to the flour mixture. Add the raisins and the walnuts (optional). Stir well. Drop by teaspoonfuls onto the prepared cookie sheet.
Sprinkle with some extra brown sugar and if you like more cinnamon. Bake about 20 minutes.
