Tofu-Eggplant Marinara Bake

Ingredients
Organic Marinara Sauce, 1 cup Onions, raw, 1 medium, dicedEggplant, 1 large peeled and dicedRed Bell Pepper, 1 mediumMushrooms, fresh, 4-5 slicedZucchini, 1 medium, slicedOrganic firm tofu 6 oz, dicedOlive Oil, 1.5 tbsp 1/4-1/2 cup waterSalt and Pepper to taste
Directions
Mix all ingredients in a large baking dish and bake covered at 375 for 30 minutes. Uncover and bake at 400 for another 20-30 minutes or until vegetables are tender.
