Smashed Potato Chocolates

1 cup smashed potatoes (no butter or milk)1 tsp salt2 T melted butter2 tsp extract (i.e. peppermint, orange, maple)8 cups icing sugar8 1oz squares semi sweet chocolate2 T shortening
Makes 48 treats
Mix together the smashed potatoes, salt, butter, and extract flavouring.
Gradually mix in icing sugar; mix in enough to make 6 to 8 cups of workable dough.
Knead slightly, and roll into balls. Leave as balls or flatten to make patties.
Arrange on sheets of wax paper, and allow to dry overnight.
Heat chocolate squares and shortening in a microwave-stir occasionally -until melted and smooth.
Working quickly, dip the balls or patties in the melted chocolate, and let cool on wax paper.
