Granola Bar

Ingredients
2 Very Ripe Bananas2 Tablespoons Extra virgin Coconut oil, melted1/2 cup skim milk1 cup natural unsweetened applesauce3 Tablespoons Stevia sweetener 2 Tablespoons honey4 egg whites1/2 cup natural peanut butter2 teaspoons vanilla extract1 cup whole wheat flour1/3 cup ground flaxseed2 teaspoons cinnamon1/2 teaspoon ground nutmeg1/2 teaspoon baking powder1/4 teaspoon Sea Salt1/2 cup soy, rice, or whey protein powder1 1/2 cups rolled oats2/3 cup sprouted grain cereal (i.e. Ezekiel 4:9)2 cups Uncle Sam cereal or similar1 cup dried fruit
Directions
Preheat oven to 350. Brush 9 x 13 inch glass pan with some coconut oil. In large bowl, combine bananas, oil, milk, applesauce, Stevia, honey, egg whites, peanut butter, and vanilla; mix well. Add in flour, flaxseed, cinnamon, nutmeg, baking powder, salt, and protein powder; mix well. Stir in rolled oats, cereals and dried fruit. For chewy bars, bake at 350 for 25 minutes, until the edges are golden brown. For crunchy bars bake at 300 until entire surface in golden brown which approx. 40-50 minutes. Remove from oven and let cool 10 minutes. Cut into 20 bars and then allow to cool completely. Refrigerate or freeze. These keep for up to 3 months in the freezer. Thaw overnight in refrigerator if frozen.
