Tortilla Soup

Ingredients

1 onion, chopped1 clove garlic, minced (I always add more!)4-5 chicken breast halves, chopped (about 1.5 pounds)1 can diced tomatoes1 can Rotel (or other spicy tomatoes)2 cans corn6 cups chicken broth (here I used 4 cups broth plus the 2 cups that 1 can of fat free cream of chicken soup+can of water makes)2.5 teaspoons of taco seasoning (or use 1.5 t cumin, .5 t salt, and .5 t pepper)1/4 cup corn starch1/2 cup water
Makes around 4 quarts, or 16 total cups. This equals around 8 large servings that are 2 cups each!
Saute onion, garlic and spices in large soup pot. Add chicken, brown. Then add all other ingredients except corn starch at water. Simmer 30 minutes. Mix corn starch with water and add to thicken soup.
If you want, serve with a little cheese and tortilla chips!

My favorite new recipe! I omitted the corn starch and threw in half a cup of rice, which gave it a nice consistency. I noticed that the caloric breakdown included a little rice, so I figured it couldn't hurt! It tastes even better the 2nd day so it makes nice, cheap lunches for my husband and me. - 1/17/10
