Rice and Veggies

Ingredients
4 cups Broccoli, bite-sized pieces2 cups Cauliflower, bite-sized pieces2 cups Asparagus, chopped2 cups Green Beans, chopped2 cups Red Onion, chopped15 cloves Garlic4 tbsp Olive Oil3 cups Brown Basmati Rice2/3 cups Peanut Butter1/2 cup Hot Water1 tsp Cayenne1 tsp Sea Salt1 tsp Black Pepper2 tsp Sugar
Directions
While rice is cooking, steam asparagus and green beans together, boil cauliflower and broccoli together, and saute onion and garlic in oil. Whisk peanut butter with hot water until creamy, then stir in cayenne, salt, pepper, and sugar. This can be mixed all together, or each part dished out separately and mixed on the individual plates.
