Rosemary Turkey Stew

Ingredients

Two fresh turkey legs3 quarts of water0.5 oz orzo0.1 cup raisinsA cup of sliced zucchiniA cup of sliced carrotsRosemary, sage, black pepper, oregano
Cover turkey legs in water in large pan. adding rosemary, sage, black pepper, and oregano (I like a total of about a tablespoon), heat to rousing simmer on high.
Add zucchini, carrots, raisins, orzo and cover then allow to simmer , covered at medium for two hours or til the meat falls off the bone.
Keep a casual eye and nose on the whole to make sure the liquid doesn't go away.
Eat hot or cool and store. Nice.

Hi! Orzo is a very small pasta, about the same size as rice. Any tiny pasta will do. A tablespoon or two of Rrce would actually do, but it would be a bit different taste and texture! Enjoy! Kathy

This sounds really good, but I have a question about amounts. Does it really say 1/10 cup of raisins and 1/2 ounze orzo? - 11/13/08

yes, it really does. I had trouble indicating that there's just a scatter of raisins (high sugar) and orzo to add texture. I hope that helps -- it keeps the carbohydrates down, the texture interesting, and the emphasis on the vegetables. 1/10 cup is probably a tablespoon or so. Same w/orzo.

Julie... thanks. I'll edit that. I'm sure that I made that comment because it really did take me 8 times through to finish it. But... I can see how it might be scant for some. Thanks.
