Healthy Banana Muffins

Ingredients
2 eggs, beaten4 medium bananas, ripe, mashed4 oz unsweetened applesauce1 tsp vanilla2 cups all purpose flour3/4 cup (36 tsp) splenda1 tsp salt1 tsp cinnamon1 tsp baking soda6 tsp splenda brown sugar blend
Directions
Blend wet ingredients together. In separate bowl, blend together dry ingredients, and then combine with wet ingredients. Do not overstir. Pour into greased or lined muffin tin. Sprinkle with 1/2 tsp brown sugar on the top of each muffin. Bake at 350F for 20-25 minutes. Makes 12 muffins.

    I think I'm more sensitive to cinnamon that I thought - I typically don't eat anything with cinnamon in it but I though I could handle this. I'm sure it's great but I couldn't eat them. - 2/27/11
