Ingredients
2 cups small brown fava beans (or lima beans)4 cloves garlic, smashed1/2 tsp. ground cumin1/2 tsp. crushed red peppersalt to taste1/4 cup coarsely chopped cilantro1/4 cup coarsely chopped parsley6 scallions, roughly chopped2 plum tomatoes, coarsely choppedlemon juiceolive oil (optional)
Directions
Soak beans in cold water overnight. Drain and transfer to a 2-quart saucepan along with garlic, cumin, chile, and water. Bring to a boil, simmer until beans are soft, about 45 minutes to an hour. Remove about 2/3's of the beans, puree the rest, return the reserved beans to the pot, salt to taste. Serve topped with tomato, parsley, cilantro, scallions, lemon juice and olive oil, if desired.

    Keep in mind that what we in North America call "cilantro" is the fresh leafy version (also called Chinese Parsley. Other areas it's called Coriander leaves. What we call "coriander" is the seed part, has more of a citrus tart flavor, not the soap flavor chilantro haters object to. - 12/2/13
