Broccoli Quiche

4 eggs1 cup cheese (I use medium cheddar)1 cup onion - sauteed2 cups skim milk1 frozen deep dish pie crust partially thawed1 cup broccoli (heated through)
Preheat oven to 375. Whisk eggs until frothy. Add cream and whisk until cream is fully incorporated.
Put the cheese, onion, and broccoli in the pie crust, then pour the egg mix into the pie crust. It may not all fit. This will have to be carefully transported to the oven. Set on a middle rack with a cookie sheet underneath to catch any spills. Bake for 45-60 mins. Doneness can be tested with a knife in the center of the quiche. It should come out mostly clean. Makes about 8 pieces.

I would not make this receipe as it is to high in chesse and double cream as well as a pie crust. I will make it using a low fat cheese such as edam and milk low fat calci trim and then as a self crusting quiche, which would be so much more healthier. I would also use fresh boccoli & red onions. - 10/29/08

I have also made it with soy cheese and soymilk and it comes out just as good. Unfortunately, I like crust so I would not omit that. Be sure to pre-cook the broccoli or else it will be a bit on the hard side when the quiche is done. Good luck with the changes!
