PORTABLE PEANUT BUTTER AND BANANA OAT SQUARES

Banana filling:1 tbsp margarine3 ripe bananas sliced1/3 cup fresh orange juice1 tsp vanillaCrumb Mixture1 cup each whole wheat flour and large flake oats1/2 cup packed brown sugar1/4 chopped unsalted peanuts1 tsp ground cinnamon1/2 tsp baking soda1/4 tsp salt1/2 cup margarine1/2 cup peanut butter
Banana filling: In a medium non-stick skillet set over medium heat, melt the margarine. Add the bananas and cook, stirring often, until softened and lightly browned. Stir in the orange juice and vanilla, cook for one minute. Set aside.
Crumb Mixture: Preheat oven to 350 F. In a large bowl combine the flour, oats, brown sugar, peanuts cinnamon, baking soda and salt.. Stir in the margarine and peanut butter. Press half of the crumb mixture into a greased 8 in. square baking dish. Spread the banana mixture evenly over the crust. Sprinkle with the remaining crumb mixture and press down gently to compact. Bake for 40 min. or until golden and set. Chill completely before slicing and wrapping individually in plastic wrap. Makes 9 large squares.
