Dijon Vinaigrette

Ingredients
1 clove garlic, minced2 Tbsp dijon mustardPinch dried basil (about 1/4 tsp)1/4 cup lemon juice2 Tbsp honey1/4 cup balsamic vinegar1/4 cup olive oil1 Tbsp parmesan cheese
Directions
Comine all ingredients except olive oil in a bowl, whisk together. Add oil, whisk to form an emulsion. Pour over salad.

Double recipe and store in fridge; to serve, remove and let stand at room temperature for at least 10 minutes before using.

    My sister gave me a very similar recipe, being diabetic I substituted Splenda for the honey and made in the blender slowly adding oil for the last step. It was stupendous. In fact everyone wanted the splenda version over the regular. A real hit - 3/18/09

    I skip the basil and parmesan (makes it too salty for me) and use black pepper. Can also substitute a bit of sugar instead of honey if too sweet. Minced shallots can also be subbed for garlic for a more delicate flavor. - 3/27/07

    LOVE this stuff! Actually got the recipe from a restaurant up North before I moved. But I use Romano cheese, no honey and do it in a blender- add oil VERY slowly this causes the dressing to thicken up quite a bit. Going to try adding maybe just a little honey, thanks for the tip... - 1/14/09
