All Bran Muffins - No oil or sugar added

Ingredients
1 1/4 cup all-purpose flour1 Tbsp baking powder1/4 tsp salt2 cup Kellogg's All-Bran cereal1 1/4 cup milk, nonfat 2 large egg whites, fresh 1/4 cup apple sauce, unsweetened 2 tsp Splenda sugar substitute
Directions
Preheat oven to 400°F. Spray 12-muffin tin pan with non-stick cooking spray.

1. Stir together flour, sugar substitute, baking powder and salt. Set aside.

2. In large mixing bowl, combine Kellogg's® All-Bran® cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg whites and apple sauce. Beat well.

3. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.

4. Bake at 400°F about 20 minutes or until golden brown. Serve warm.

    I fixed this today. I added 1 cup blueberries,frozen and 1/2 cup chopped walnuts. I am not sure what that addes to the calorie count but they were very good. I got 15 muffins w/recipe. - 5/2/21

    I halved this recipe. I only have a six-muffin tin. I used wheat flour and egg substitute instead of eggs. I also left it baking for five extra minutes and it could have used alittle more. (My oven is new, but I can't say). I also left the faux-sugar out and the salt. I will make this again. - 8/4/11

    I used egg beaters instead of the egg whites, and 2 packets or Truvia for the Splenda. I also added 1 cup frozen blueberries. They are perfect to bring to work for a quick snack. Be sure to use the cups coated with spray instead of paper cups- they stick like crazy! - 3/11/09
