Acadian (Cajun) Chicken Fricot (Stew) with Dumplings

Ingredients
2 tsp of Sunflower Oil1.5 cups of diced Cooking Onions2 boneless, skinless Chicken Breasts6 boneless, skinless Chicken Thighs1 medium size Turnip, diced4 medium size Carrots, diced3 medium size Potatoes, diced2 tsp of ground Savory1 tsp of iodized Sea Salt1.5 tsp of ground Black PepperAcadian Dumplings:1.75 cups of All Purpose White Flour3 tbsp of Baking Powder (aluminum free)0.5 tsp of Iodized Sea Salt1 tbsp of Salted Butter0.5 tsp of Non-Fat Milk1 large beatten Egg
Directions
In a large stock pot, heat oil on medium heat and add diced onions. Cook until transparent.

Cut boneless skinless chicken pieces in small bite size pieces. Add to cooked onions and stir until fully cooked.

Add water to cooked chicken mixture, and bring to a boil. Add spices and turn down heat, and simmer for approx 45 minutes.

Add diced carrots and turnip, cook for 10 minutes. Add potatoes and cook for another 10 minutes.

Dumplings:

Mix all dry ingredients together. Break up butter with fingers in flour, until butter pieces are the size of peas.

Beat egg and mix with milk. Pour into flour mixture and stir until well mixed.

Bring Chicken Fricot to a boil, and with a large spoon, add dumpling mixture.

Cover and simmer for approx 10 minutes.

Makes 8 servings.

    We enoyed this. I agree with the recommendation about additional milk. We used 6 cups of water and it turned out pretty well, and it is definitely a lot of food. - 1/29/11

    Great meal just the recipe needs help as other members have suggested;
    1/2 tsp pepper
    3 tsp baking powder
    1/2+ cup milk
    water-Not sure how much I used but keep it thicker until the end so you don't have to thicken it with flour.

    Made this tonight- very tasty. Most of calories are in dumplings, and stew is great without it. I think it is supposed to be 3 tsp (not Tbsp) of baking powder, and 1/2 cup (not tsp) of milk - 1/13/11
