Easy Shrimp & Rice

Ingredients
12 lg shrimp (8 oz)3/4 c diced orange bell pepper1/2 lg tomato, diced (about 140 g)1 T olive oil1 garlic clove, minced1/2 c shredded mozzarella1 c cooked jasmine rice1 t basil (or to taste)
Directions
Cook rice according to package. Divide 3/4 c cooked rice onto 2 plates.
Sautee shrimp in garlic and oil until cooked through. Divide and arrange over rice.
Sprinkle with shredded cheese.
Heat peppers until hot. Spread over plate.
Heat tomato and basil together. Lay over the top.
Ser ve.
