2 Cans Artichoke Hearts in water, sliced2 Cans Sweet Yellow Corn1 Med Can Sliced Black Olives2 Fresh Red Bell Peppers1 Large Fresh Sweet Yellow Onion2 Cans Organic Garbanzo Beans2 Cans Purple Hull Peas (or use black eye peas)1 bunch of BasilSalt and Pepper to taste.May add a clove or two of minced garlic.Tomatoes and Avocado or good in this, but I add them on the side, as they would get too mushy if just left in the mix the couple days that this lasts.
Prep time is spent dicing onions, peppers, basil, and opening cans, and mixing all ingredients in a large bowl.
