4 5oz. cans of Chicken of the sea boneless skinless salmon drained1 med red bell pepper chopped1/2 cup chopped onion1/2 cup celery2 T. capers1 cup bread crumbs2 large eggs1/4 cup mayonaise2 tsp dijon mustard2 T. olive oil
Heat 1 T. oil in skillet and saute onion, celery, red pepper and capers and saute until tender. Set aside to cool. In a bowl combine drained salmon, bread crumbs, eggs, mayonaise, and dijon mustard, stir just to combine then add cooled vegetable mixture. Refrigerate salmon mixture for 1 hour.
Heat remaining 1 T. oil in skillet , shape salmon mixture into 8 patties, fry until golden brown and firm about 7 minutes each side.

My fiance was used to breaded fat that his mom used to make. I cook completely different than her very healthy. I had never made salmon patties so I was a little nervous he wouldn't like them.
