Vanilla and Cinnamon Oatmeal Protein Crepes

Ingredients
1 cup oatmeal2/3 cup vanilla protein powder2 tsp. baking powder1 tsp cinnamon3 egg whites1 cup milk1/2 cup applesauce1 tsp vanilla extract
Directions
1. Mix dry ingredients in a bowl. Add remaining ingredients and blend well. (will seem quite liquidy)
2. Turn stove on low to medium heat.
3. Coat skillet with nonstick spray and pour batter into skillet 1/2 cup at a time until desired size and thickness is reached.
4. When bubbles begin to form on top, flip crepe.

Roll it up and eat it or serve with syrup or fruit!

    Although the taste and texture are quite different from a regular crepe, I did enjoy these. I froze the last one, ate it for snack. (I thought it was even good without toppings, at room temp.)
    Lots of protein, low in fat and carbs, and almost 5 grams of fiber! I will make these again. - 8/31/15
