GFCFSF Strawberry-Rhubarb Muffins

Ingredients
1/2 cup sorghum flour1/2 cup buckwheat flour1/4 cup cornstarch1 1/2 tsp baking powder1/2 tsp baking soda1/2 tsp sea salt1 tsp xantham gum1 tbsp cinnamon1/4 cup loose brown sugarEnerG egg replacer for 2 eggs mixed with 1/2 cup water1/4 cup coconut oil1/4 cup agave nectar1 cup whole strawberries3/4 cup diced rhubarb
Directions
Mix together dry ingredients
Mix together wet ingredients separately until frothy
Process strawberries and rhubarb until chunky but mostly liquid

Add all three mixes together and stir until just combined

Pour ~1/4 cup into large muffin tins and bake at 350 for 30-40min.
