Sweet & Spicy Salmon

Ingredients
16 ounces salmon filets1/2 teaspoon cayenne pepper, more or less to your taste4 tablespoons marmalade, any flavor
Directions
1. Rinse filets in water and pat dry. Sprinkle evenly on top side (non-skin) with cayenne pepper.


2. In a hot frying pan sear salmon on each side for 45-60 seconds.


3. In a small microwave-proof bowl, spoon the marmalade. Microwave for 30 seconds to melt/liquify .


4. Turn salmon fillets, top side up. Spoon a half a tablespoon of liquid marmalade over each filet. Flip immediately. Spoon a half tablespoon over the bottom of each filet. Flip after the top sides have cooked 1 minute. Spoon any remaining marmalade over the tops, reduce heat to medium-low, cover and cook until the fish is done (2-3 minutes).


5. Serve immediately, spooning any marmalde that has melted into the bottom of the pan over the fish.
