Cheesy Avocado Salsa Chicken

Ingredients
4 boneless skinless chicken breastsseason salt (to taste)2 tbs olive oil16 oz jar salsa4 slices of tomato4 slices of Kraft Fat Free Swiss singles1 Haas Avocado (thinly sliced, skin and pit removed)3 cups cooked brown rice1 tbs butter unsalted
Directions
Season chicken with seasoning salt or desired spices
Cook chicken in oil on medium high heat until browned on both sides (approx 6 mins) and prepare rice at the same time.
Cover with jar of salsa and reduce heat to medium heat until fully cooked for a couple more minutes
Cover each breast with a tomato slice and avocado pieces
Then cover each breast with a slice of cheese over tomato and avocado. Put lid on pan and reduce heat until cheese melts.
Add butter to hot rice and pour chicken and sauce over rice and serve.

    This was pretty good. I've never had Avocado before. So it took me a minute to figure out how to peel it, core it, and cut it. Also, i divided my meal into smaller portions. So, instead of getting 4 servings out of it, I will get about 6-8 servings. - 10/20/09

    this recipe was DELICIOUS... we are not much of a swiss cheese family so I did mozzarella instead.. and I baked it in the oven.. but we still got the GREAT flavors.. even my 4, 3 and 23 month old loved the recipe.. we will definately make it again.. thanks for sharing - 1/25/10

    MMMMM!!! My entire family loved this including my picky husband and my kids. We used pepper jack cheese and omitted the rice but had steamed spanish rice and fat free refried beans on the side. :o) Will add this to the regualr rotation. - 6/15/09

    I loved that I didn't have to heat up the whole house making this tasty dish. I think I will like it better with some jack cheese instead of the swiss, though, to complement the flavors of the salsa & avocado. But overall, a deliciously filling meal! - 6/5/09
