Spicy Garden Harvest Soup with Chick Peas

1 TBS Olive oil1 medium onion, chopped1 carrot, chopped 1 cup chopped celery4 cloves minced garlic1 red bell pepper, chopped2 qts (8 cups) vegetable or chicken stock, low sodium1-29 oz can crushed tomatoes1 can chick peas (garbanzo beans)2 cups water1 small head cabbage, thinly slicedhot pepper saucesalt and pepper
Heat oil in large pot to medium high heat. Add onion, cook 5 minutes, stirring occasionally. Stir in carrot, garlic, bell pepper, celery, cook until tender. Add stock, tomatoes, water and cabbage, simmer uncovered for 20 minutes. Add garbanzo beans. Season to taste with hot sauce and salt and pepper if desired. Garnish with parsley or cilantro if desired.
Time saver tip: Use cole slaw mix from the produce section and frozen chopped vegetables from the freezer. ie chopped peppers and onions.
