Apple & Cinnamon muffins

Ingredients
6 tablsp apple sauce6 tablsp flax meal1 large egg, whipped2 teasp Splenda sugar substitute0.5 teasp baking powder1 teasp cinnamon10 gms melted butter
Directions
Turn the oven to gas mark 5
melt the butter in a glass bowl
beat the egg, Splenda, baking powder and cinnamon
gently mix the butter and flax meal in and wait 2 mins for the mixture to thicken
spoon into paper cake cases in a muffin tin
bake for about 10 mins until light golden

    Number of servings are off - 6 tablespoons flax divided into 9 muffins? No way! I make flax muffins every day, and I put 6 tablespoons flax into EACH muffin. For all ingredients, these are the same proportions used to make a single microwave muffin. Buyer beware, these would be mini-mini muffins!!! - 3/21/10
