Summer Fresh Vegetarian Pasta

3 garden fresh tomatoes2 cloves minced garlic2 Tbsp. extra virgin olive oilhandful of fresh basil, oregano, and thyme (all or some, depending on taste)2 Tbsp. grated parmesan cheese2 cups cooked whole wheat pasta1.5 cups morning star recipe crumbles
Heat olive oil in large skillet over medium high.
Add garlic cloves cook until fragrant.
Add tomatoes and herbs.
Let simmer until sauce begins to thicken up.
In a separate pan, heat morning star soy crumbles until they begin to crisp slightly. Add to the sauce.
Meanwhile, cook and drain your pasta.
Serve sauce over pasta. Sprinkle parmesan cheese on top. Garnish with fresh herbs.
Serves two happy people.
