Inside Out Eggplant Parm

Ingredients
Egg Plant2 Egg Whites1 Cup of FF Shredded MozzarellaPinch of diced GarlicCan of Diced tomatoes
Directions
1. Cut the eggplant (round, not long) in half inch slices.

2. Mix Cheese and Garlic in with the Egg Whites.

3. Take an Eggplant slice and cut a pocket into it, almost all the way through.

3. Stuff cheese Mixture into Eggplant pocket.

4. Spray pan and let eggplant cook for about 2 minutes on both sides.

5. Put cooked Eggplant in baking dish, cover with diced tomatoes, and in oven on 300 for 10-15 minutes.

6. Sprinkle with Parmesan Cheese if desired.
